Feel like home in our real Bolognese house in the very center of Bologna, 7 minutes walking from the main square. In our cozy and 100% safe environment, we'll feel how Pasta is an experience of Love and Tradition, made with the Fresh ingredients our Italian Mum would choose for us on a Sunday Morning :) I Promise it to you as I did to all the 3300+ happy people who took this class (*ALWAYS* write me before booking here) Starting from scratch, YOU'll make the dough manually, I'll tell you how to play with it and we'll make our own meal through - both - a traditional and a creative process. While YOU'll create all the different fillings, the proper sauce(and a surprise one, made right at the moment!). Then we'll have a break to taste 5+ different kind of cheeses and local aged ham. Guided and unlimited tasting it's necessary to learn a way to get a proper result that you will be happy to replicate back home. In this cooking class you'lI learn how to make filled and traditional pasta: Tortelloni, Tortellini, Ravioli, Agnolotti, Tagliatelle and Garganelli. So far just 3 classes finished to eat all of them. The Secrets of Parmigiano Reggiano Full
At the arrival I will offer you cofee break, and I will give you a lab coat for the access to the production area. I’ll bring you along a complete tour to discover all the steps of Parmigiano Reggiano’s production. We’ll see where the animals are bred and where the milk is mould. We’ll go into the cheese factory during milk processing and we'll witness in cooking and making cheese wheels. We’ll see then the process of salting and maturing up to enter the huge “caveau”, where thousands of cheeses wheels are guarded and laid out in long rows in the silent maturation rooms and where the scent of cheese will smell so nice and exciting that we won’t be able to resist till the final tasting of cheese and local typical products. Explore Bologna and all of its secrets
We'll start off with the cheeky secret hidden in the Fountain of Neptune! Then, I'll tell you all about the biggest church in Bologna, Saint Petronius. After, just a short walk away, we'll go to the Archiginnasio Library, a spectacular demonstration of Italian Architecture. I'll take you to the Anatomical Theater as well; tickets are offered by me! A historical masterpiece, it's where medical students learned Anatomy, directly from the human bodies in front of them! (closed on Sundays) You can't visit Bologna without going to the Two Towers! I'll take you there and let you know the particular story that's behind its construction. After showing you some of my favorite spots, we'll go to Via delle Pescherie Vecchie, and enter into the world Bologna is famous for: food! Situated in the center, this street is filled with restaurants and markets. By now, you'll probably be hungry so I'll recommend the best Italian restaurants! Of course, we can't miss the university district as well, where we'll also head into the ex-Jewish Ghetto of Bologna. Don't forget I'll be your personal photographer as well, and I'll follow your pace the whole time! We will taste local salumi, local cheese and home-made pasta, and local wine of course! We will go also to a special ancient indoor market, where you can buy specialities of the town to bring home! I will suggest you what to but and how to cook it. We Will also have amazing gelato! You will enjoy the special atmosphere that makes the district so special, lively and energetic while learning more about things you can’t miss when visiting Bologna. Our journey around Bologna starts between Bologna centrale and one of the main gates Porta Galliera portal of the former outer medieval walls of the city of Bologna. Here we discover the dark past of post WW2 events and the joyful liberal future of Bologna, we’ll be marching through Via Indipendenza to the cutest secret of Bologna so-called Finestrella, and then we discover student quarters, the University of Bologna, Piazza Verdi and Jewish ghetto. Do you know what else is cool about Bologna? Porticos! And we are going to pass under so many of them. Later on, we discover the story of Le Tre Frecce and Sette chiese. What else? The two towers! Story, secret and superstition about them. The next stop is one of the well-preserved squares in Italy Piazza Maggiore, I’ll tell you about the Neptune statue, San Petronio, a prison that became a library and an interesting secret that I won't spoil here because you'll discover it with your ears. Are you a cheese lover? Would you like to know more about our regional dairy products, but you never had the chance? Do you like to try new cheese flavors? Then you can’t miss our 2 hours walking and tasting tour through the Emilia Romagna cheeses. Starting from the medieval Market, where you can find all the typical products of Bologna, I will introduce you to all the traditional cheeses that our beautiful region could offer, beginning with the king, his majesty Parmigiano Reggiano. You can learn how it's made and how many different kinds you can find, depending on the cow breeds. We will talk about Grana Padano and why it's so different from Parmigiano, we will discover Pecorino di fossa and squacquerone, typical cheeses of Romagna. At the end of the tour we will head to my house to taste them all and catch the differences among them, adding some jams, honey, wine jelly, caramelized figs and some drops of the real balsamic vinegar. The highlight of the tasting is the rare possibility to taste the Traditional Balsamic vinegar from Modena PDO 25 years old, completely different from what you have tasted before! My secret food places
I was born in Bologna and I know my town very well, all the little shops, the hidden gems and the special places that serve special food. This tour let you discover the city from a personal point of view, trying to skip the crowded touristic places. At the end of our walk you will have eaten a complete meal and you will know more about my city! I will lead you to my favourite spots to try the best traditional food. We will start the day with the best coffee in town, talking a little about this iconic drink, then after a short walk we can stop for the most traditional pasta course: tortellini in broth, the best you have ever tried because they were born in Bologna. Moving to a less touristic market through narrow and quiet streets we can admire women making handmade pasta in a way you have never seen! But this is not enough... you have to try some local specialty, a secret well preserved by bolognese people. We will end with a good gelato, because Bologna is also the City of Gelato! If you are interested in this matter, there is also the possibility to visit the Gelato Museum and to have a workshop there. Non ci saranno mai due esperienze uguali con me: ogni incontro sarà diverso, unico nel suo genere! Tutto quello che faremo insieme dipenderà dai progetti di restauro in corso e dalle loro necessità. Prima di cominciare ti offrirò una colazione di benvenuto e potremo conoscerci meglio, potrai ambientarti nel laboratorio osservando gli oggetti artistici e familiarizzando con lo spazio di lavoro: ti insegnerò a toccare l’arte con rispetto e senza danneggiarla, ti insegnerò a muoverti con delicatezza tra le opere e gli strumenti… l’emozione dell’arte che rinasce ti coinvolgerà profondamente! Dopo averti introdotto alle principali fasi del restauro potrai eseguire con le tue mani anche delle piccole prove pratiche di restauro applicato sotto la mia supervisione! I achieve a balance between demonstration and hands-on at the working station. We'll prepare two different pasta shapes and try to shape another three. Then you'll see me in the kitchen cooking and preparing the dishes. You'll sit at the table at a 1-meter distance from one another. In a few minutes, you'll taste what you have previously prepared from scratch, topped with different sauces. You can choose among meat menu - no pork Bolognese - vegetarian menu. Making handmade pasta in Bologna
We will make handmade fresh pasta and all the other dishes from scratch in a warm and professional real kitchen. It's not a demonstration, it's a real hands-on class of 3 or more hours where you will make and understand all the steps, guided by my 15-years experience in teaching. Handmade pasta is made using only the rolling pin (never talk with me about machines!) and it is a real art, maybe not immediate but challenging and you will be really proud of your work. At the end of the class you will have learned all the tricks of the local chefs so, when back home, you can astonish your friends with your amazing cooking. You can choose all the dishes we will make so PLEASE CONTACT ME BEFORE BOOKING in order to decide together what we are going to prepare. We can make tagliatelle with ragù (bolognese sauce, that has to cook slowly for hours...), tortellini, tortelloni with ricotta, ravioli, lasagne, starters, second courses and desserts. Our journey around Bologna starts between Bologna centrale and one of the main gates Porta Galliera portal of the former outer medieval walls of the city of Bologna. Here we discover the dark past of post WW2 events and the joyful liberal future of Bologna, we’ll be marching through Via Indipendenza to the cutest secret of Bologna so-called Finestrella, and then we discover student quarters, the University of Bologna, Piazza Verdi and Jewish ghetto. Do you know what else is cool about Bologna? Porticos! And we are going to pass under so many of them. Later on, we discover the story of Le Tre Frecce and Sette chiese. What else? The two towers! While YOU'll create all the different fillings, the proper sauce(and a surprise one, made right at the moment!). Then we'll have a break to taste 5+ different kind of cheeses and local aged ham. Guided and unlimited tasting it's necessary to learn a way to get a proper result that you will be happy to replicate back home. In this cooking class you'lI learn how to make filled and traditional pasta: Tortelloni, Tortellini, Ravioli, Agnolotti, Tagliatelle and Garganelli. So far just 3 classes finished to eat all of them.
